Oleophilic

Oil, a non-polar substance, does not mix with water, a polar substance. Therefore, applying a non-polar or oleophilic medium to water, like activated carbon, will attract all non-polar contaminants hiding in the water without absorbing it. Carbon makes for an exceptionally useful purification method because of its oleophilic properties.
